Okay SOOOOO I forgot to take a picture of the wonder waffles we had yesterday morning.. but this comes pretty close! Thanks Google!!!  

Vegan Cinnamon Spiced Waffles with Pecan Topping

  • 1 1/2 cups whole wheat pastry flour
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon of allspice
  • dash of ground ginger
  • 2 1/4 cups soymilk
  • 1/4 cup canola oil
  • 3 tablespoons brown sugar

Pecan Topping

  • 1 cup crushed pecans
  • brown sugar
  • maple syrup
  • olive oil
  • salt

Pre-heat the oven to 375. First make the topping… Mix together the pecans, maple syrup and brown sugar. I have no idea how much of each I used, just enough to coat well, then a dash of salt. Then put some oil down on the pan as well so the topping doesn’t stick. Then put in the oven for 8 minutes. Then remove and let cool.

Then, sift or whisk together the flour, baking powder, baking soda, and salt in a large bowl. Mix the soymilk, canola oil, and brown sugar in a medium bowl. Pour the soymilk mixture into the flour mixture and stir just until blended. Cook on a waffle iron for 3 to 5 minutes, generously spraying both grills with oil before each waffle. Makes 4 (7-inch) round Belgian waffles.

These are super yummy, I got the recipe from here, I just tweaked it a bit with using the whole wheat pastry flour and the spices.  You’re welcome ;-)

So what does a girl want the morning after a night of lots of tequila drinking? Hmmm…. eggs, bagels, sausage, bacon, potatoes, orange juice, water and 2 tylenol please! Right. Vegan. Ok… I can do this… roll over in bed with my boo and grab my trusty lap top and started the search! Having most of the ingredients, just needed a quick run to my mecca Whole Foods and I was back, stove top in action in no time. Breakfast: Tofu Scramble with mushrooms and Chorizo-Style Seitan, golden potatoes with onions and peppers and bagels with tofu cream cheese. Hangover Heaven. So, the scramble, super easy and it looks like eggs! My new ingredient now is nutritional yeast and will find more ways to use it. Sooooo good for you. I was looking for a fake breakfast sausage at the Whole Foods, when one of those very friendly and helpful employees pointed me in the direction of Uptown’s Naturals. Found when I opened the package, it was better to mix with the scramble. Mind you, if I wanted to go light on the carbs, I would have used tortillas and put that delish mess in there with some salsa…. but bagels sounded better. Then my classic hashbrowns, no real recipe always play by ear, but I saute the potato cubes for a bit first with olive oil, salt and pepper. Then add the onions and peppers, using a cover for a bit too just to make sure the potatoes cook all the way through. Then right at the end I splash them with balsamic vinegar. You could also throw in some minced garlic, but I was already using that in my scramble. Let me tell you this dish really hit the spot, I love me my breakfast!
